New to Driftworks, some questions about technique

Hey guys. Just joined up because I have some questions.
My car is an E30 318is, and while it's got a shitty open diff and tyres made of teflon, I've given sliding a go in it. I've also had a go in a few other cars, like my MA70 and a friend's KE70 with locked diff and a bunch of other stuff.

My first question is about how much I'm moving the wheel. While going sideways around roundabouts (closed roads on private property of course) I'm constantly moving the wheel quite big amounts. Watching videos of people who know what they're doing they're only slightly moving the wheel while sliding, is that something that comes with practise? Or is my feathering the throttle too violent and upsetting the car?

My second question is how to actually exit the drift. Now I have been told that you gradually lift off and turn the wheel back to centre, but I can't seem to turn the wheel fast enough (steering rack is 4.4 turns lock to lock or something ridiculous like that). I'm loathe to let the wheel run through my hands, but is that what I've got to do? I'm still new to sideways so am really only sticking to roundabouts and really big dead ends, but I think I'll start tackling corners once LSD is done.

Sounds to me like you can't turn back to exit the skid quick enough because you've already begun a spin as you refuse to let the wheel slip in your hands.
It is not humanly possible to steer fast enough to turn into a slide. You need to let go of the wheel and allow the cars geo to steer for you then you won't spin. Also relax, it sounds like you are too tense and are wrestling the car too much.

Fair enough. Just a tap and go kind of thing? When I go to stop the wheel spinning, will it have to be a slightly more gentle grab to not upset it? I can't find details on what the factory caster is (it's not adjustable) but hopefully it's enough.
